Pumpkin and Sweet Potato Soup

Ingredients

  • 1/2 butternut pumpkin
  • 1/2 sweet potato
  • 1 onion
  • 1 can of coconut milk (400 ml)
  • 800 ml water
  • 1/2 a cube veggie stock
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp onion powder

Preparation

  1. Chop the onion, sweet potato and the pumpkin into cubes.

  2. Add the onion to a big pot together with some oil.

  3. Fry it off for a minute or two before adding the sweet potato and pumpkin.

  4. Pour the coconut milk and the water into the pot.

  5. Add the vegetable stock and the spices and let the soup simmer for 40 minutes.

  6. Mix the soup with a stick blender until it's smooth.

  7. Serve with some delicious bread.
