Lentil and Sweet Potato Stew
Ingredients
- 1 onion
- 2 cloves garlic
- 1 sweet potato
- 100 ml red lentils (dry)
- 1 can coconut milk (400 ml)
- 200 ml water
- 200 ml frozen peas
- 2 tablespoons tomato puree
- 2 teaspoons mango chutney
- 1 tablespoon garam masala
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1 teaspoon black pepper
Preparation
Add chopped onion and garlic into a pan and fry in some oil.
After a minute or two, add chopped sweet potatoes and the lentils and fry for a few more minutes before adding the rest of the ingredients.
Stir and put on a lid.
Let the stew simmer on medium heat until the sweet potatoes are soft.
Stir in between.
When the dish is done, serve with rice.
