Lentil and Sweet Potato Stew

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 1 sweet potato
  • 100 ml red lentils (dry)
  • 1 can coconut milk (400 ml)
  • 200 ml water
  • 200 ml frozen peas
  • 2 tablespoons tomato puree
  • 2 teaspoons mango chutney
  • 1 tablespoon garam masala
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Preparation

  1. Add chopped onion and garlic into a pan and fry in some oil.

  2. After a minute or two, add chopped sweet potatoes and the lentils and fry for a few more minutes before adding the rest of the ingredients.

  3. Stir and put on a lid.

  4. Let the stew simmer on medium heat until the sweet potatoes are soft.

  5. Stir in between.

  6. When the dish is done, serve with rice.
