Vegan Butter Chicken Inspired Stew

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 320 g vegan chicken
  • 1 tsp grated ginger
  • 1 can coconut milk (400 ml)
  • 2 tbsp tomato purée
  • 1/2 tbsp sriracha
  • 1 tbsp curry powder
  • 1 tbsp garam masala powder
  • 1/2 tsp turmeric
  • 1 tsp black pepper
  • 1 tsp salt
  • Oil (as needed for frying)

Preparation

  1. In a pan, fry the chicken and chopped onion in some oil.

  2. After a few minutes add the crushed garlic and the grated ginger.

  3. Stir and then add the rest of the ingredients.

  4. Let the stew boil for a few more minutes before serving with rice.
