Vegan Chickpea Curry Stew

Ingredients

  • 1/2 onion
  • 1 clove of garlic
  • 1 thumb of grated ginger
  • 1 can of chickpeas
  • broccoli
  • 1 can of coconut milk
  • 1 tbsp mango chutney
  • 1 tbsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • salt and pepper to taste
  • oil for frying

Preparation

  1. In a pan, add chopped onion, garlic, and grated ginger with some oil and fry until the onion has some color.

  2. Add rinsed chickpeas, broccoli, the spices, and coconut milk.

  3. Let the stew simmer on low heat and add a lid so the broccoli gets steamed.

  4. Serve with rice.

Rice

  1. While boiling rice, add a little curry powder and chili powder for flavor.

Tips

  1. You can add more vegetables if desired to make the dish more filling.
