Veggie Curry Stew

Ingredients

  • 1 small onion
  • 1/2 sweet potato
  • 1/2 butternut pumpkin
  • 380 g chickpeas
  • 2 dl peas (200 ml)
  • 400 ml coconut milk
  • 200 ml water
  • 1 tbsp mango chutney
  • 1 tbsp panang paste
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp curry

Preparation

  1. Start frying chopped onion, pumpkin and sweet potato in a pot with some oil

  2. Add the chickpeas and the peas

  3. Pour the coconut milk + the water into the pot

  4. Add the spieces and let the stew cook for 40 min

  5. Serve with rice
