Veggie Curry Stew
Ingredients
- 1 small onion
- 1/2 sweet potato
- 1/2 butternut pumpkin
- 380 g chickpeas
- 2 dl peas (200 ml)
- 400 ml coconut milk
- 200 ml water
- 1 tbsp mango chutney
- 1 tbsp panang paste
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp curry
Preparation
Start frying chopped onion, pumpkin and sweet potato in a pot with some oil
Add the chickpeas and the peas
Pour the coconut milk + the water into the pot
Add the spieces and let the stew cook for 40 min
Serve with rice
