Spicy Lentil Soup

Ingredients

  • 1 onion
  • 4 small potatoes
  • 2 carrots
  • 1 clove of garlic
  • 3 dl red lentils
  • 1 veggie broth
  • 1 can of coconut milk (400 ml)
  • 800 ml water
  • 1 tbsp tomato puree
  • 1 tbsp mango chutney
  • 1 tbsp curry powder
  • 1/2 tbsp cayenne pepper
  • 1 tsp salt

Preparation

  1. Start with chopping the onion, potatoes and the carrots into small pieces

  2. Then, add them to a pot together with some oil and stir

  3. Add crushed garlic and let everything fry off for a few minutes

  4. Add the rest of the ingredients, put on a lid and let the soup simmer for an hour

  5. Stir in between

  6. When the carrots and potatoes are cooked through, the lentil soup is ready to serve
