Red Lentil Dal

Ingredients

  • 1 1/2 cups dried red lentils
  • 2 carrots diced
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1 chunk ginger minced
  • 4 cups water
  • 1 can coconut milk
  • 2 tsp cumin
  • 1 heaping tbsp curry powder
  • 1tsp turmeric
  • 1tsp paprika
  • 1/2 tsp cayenne
  • Salt and black pepper
  • 1/2tbsp maple syrup
  • 1 cup frozen peas
  • 1/2 cup cooked chickpeas
  • 2 massive fistfuls baby spinach
  • 3/4 cooked rice

Preparation

  1. Sauté onion and carrots for 5 min, add garlic and ginger sauté for 1 minute, add spices, sauté 1 min

  2. Add lentils, water and maple syrup and simmer for 15 minutes

  3. Add coconut milk, peas cook for 5 minutes

  4. Season with salt and pepper to taste and add spinach and cooked rice

  5. Once spinach has wilted, transfer to bowls and enjoy
