Red Lentil Dal
Ingredients
- 1 1/2 cups dried red lentils
- 2 carrots diced
- 1/2 onion diced
- 2 cloves garlic minced
- 1 chunk ginger minced
- 4 cups water
- 1 can coconut milk
- 2 tsp cumin
- 1 heaping tbsp curry powder
- 1tsp turmeric
- 1tsp paprika
- 1/2 tsp cayenne
- Salt and black pepper
- 1/2tbsp maple syrup
- 1 cup frozen peas
- 1/2 cup cooked chickpeas
- 2 massive fistfuls baby spinach
- 3/4 cooked rice
Preparation
Sauté onion and carrots for 5 min, add garlic and ginger sauté for 1 minute, add spices, sauté 1 min
Add lentils, water and maple syrup and simmer for 15 minutes
Add coconut milk, peas cook for 5 minutes
Season with salt and pepper to taste and add spinach and cooked rice
Once spinach has wilted, transfer to bowls and enjoy
