Vegan Carrot Soup with Fresh Bread

Ingredients

  • 1 onion
  • 1 clove of garlic
  • 8 medium size carrots
  • 2 potatoes
  • 1 tbsp grated ginger
  • 1 veggie stock
  • 4 dl water
  • 3 dl vegan cream
  • 1/2-1 tsp chili powder
  • 1 tsp salt
  • 1 tsp black pepper

Preparation

  1. Fry onion and garlic for 2 minutes in oil.

  2. Add carrots and potato and fry for a few more minutes.

  3. Add grated ginger, veggie stock, spices, and liquids.

  4. Put on a lid and let the soup simmer on high heat.

  5. After 30 minutes, blend the soup with a mixer until smooth.

  6. Add more water if needed until you have a good consistency. I added 1 dl extra water.

  7. Serve with fresh bread.
