Vegan Carrot Soup with Fresh Bread
Ingredients
- 1 onion
- 1 clove of garlic
- 8 medium size carrots
- 2 potatoes
- 1 tbsp grated ginger
- 1 veggie stock
- 4 dl water
- 3 dl vegan cream
- 1/2-1 tsp chili powder
- 1 tsp salt
- 1 tsp black pepper
Preparation
Fry onion and garlic for 2 minutes in oil.
Add carrots and potato and fry for a few more minutes.
Add grated ginger, veggie stock, spices, and liquids.
Put on a lid and let the soup simmer on high heat.
After 30 minutes, blend the soup with a mixer until smooth.
Add more water if needed until you have a good consistency. I added 1 dl extra water.
Serve with fresh bread.
