Cauliflower Curry with Lentils and Spinach
Ingredients
- 1 onion
- 3 small potatoes
- 1/2 cauliflower (used frozen)
- 380 g red lentils
- 390 g crushed tomatoes
- 400 ml coconut milk
- 2 big handful of spinach
- 1 tbsp curry powder
- 1 tbsp garam masala
- 1/2 tsp black pepper
- 1/2-1 tsp salt
Preparation
Chop onion and potatoes into small cubes.
Fry them for a few minutes in a big pot with some oil or water. Water was used this time.
Chop the cauliflower into small pieces and add it along with the rest of the ingredients.
Let the stew simmer on medium heat for about 40-50 minutes or until the potatoes are soft.
Stir a few times in between.
