Chickpea Curry Stew

Ingredients

  • 1 tbsp grated ginger
  • 1 head of broccoli
  • 2 big handfull of spinach
  • 390 g crushed tomatoes
  • 1 tbsp soy sauce
  • 400 ml coconut milk
  • 2 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tsp salt
  • 1/2 tsp tumeric
  • 1/2 black pepper

Preparation

  1. In a pot, add chopped onion, the grated ginger and some oil

  2. Fry it off for a few minutes

  3. Chop the broccoli into smaller pieces and add them together with the rest of the ingredients

  4. Let the stew simmer for 10 min o medium heat

  5. Stir in between

  6. Serve with rice
