Chickpea Curry Stew
Ingredients
- 1 tbsp grated ginger
- 1 head of broccoli
- 2 big handfull of spinach
- 390 g crushed tomatoes
- 1 tbsp soy sauce
- 400 ml coconut milk
- 2 tbsp curry powder
- 1 tbsp garam masala
- 1 tsp salt
- 1/2 tsp tumeric
- 1/2 black pepper
Preparation
In a pot, add chopped onion, the grated ginger and some oil
Fry it off for a few minutes
Chop the broccoli into smaller pieces and add them together with the rest of the ingredients
Let the stew simmer for 10 min o medium heat
Stir in between
Serve with rice
