Caulflower Potato Curry
Ingredients
- 1 onion
- 2 carrots
- 2 pickled jalapenos
- 3 garlic cloves
- thumb big piece of ginger
- 1 can tomatoes
- 1 cauliflower
- 1tb vegetable broth
- 3tb curry powder
- salt
- pepper
- chilli flakes
- 1tb kurkuma
- 1 can coconut milk
- handful cilantro
- lime
- oil
- potatoes
Preparation
Cook potatoes
Chop all veggies
Heat up water and cook the cauliflower for 7 minutes
In a big pan or pot fry the spices and vegetable broth
Add oil and add the onion, garlic and ginger
Add the carrot and jalapeno
Simmer for about 5 minutes
Add canned tomatoes and coconut milk
Simmer for 3 minutes
Add cauliflower florets
Cook for a couple more minutes
Spice with more seasoning if needed
Serve with cilantro, lime and potatoes
