Simple Jackfruit Curry with Mushrooms
Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garam masala
- 1.5 cups mushrooms, chopped
- 1 can jackfruit, drained and rinsed
- 1/2 can coconut milk
- 1/2 can tinned tomatoes
- 1 tbsp vegan curry paste (or curry powder)
- salt and pepper, to taste
Preparation
Add the onion, garlic, smoked paprika, cumin and garam masala to a non-stick saucepan with a splash of water. Sauté for 2-3 minutes, until softened and fragrant.
Then, add the mushrooms and sauté for around 3 minutes more, until they begin to cook down.
Meanwhile, pull apart the jackfruit pieces using your hands or a fork.
Transfer the jackfruit to the saucepan and add the coconut milk, tomatoes, and curry paste.
Simmer over a medium heat for 8-10 minutes, until thick and creamy.
Season to taste with salt and black pepper before serving.
