Quick Store Cupboard Masala Chickpeas

Ingredients

  • 1 onion, diced
  • 2 cloves of garlic, crushed
  • 1 tin chickpeas
  • 1 tin tomatoes
  • 1 tin coconut milk
  • 1 tbsp medium curry powder
  • 1 tsp turmeric
  • 1 tbsp fenugreek seeds
  • Handful spinach
  • Steamed broccoli
  • Half a packet of cooked quinoa
  • Salt and pepper
  • 1 tbsp avocado or coconut oil

Preparation

  1. Leave out the salt for babies.

  2. Add the oil to a pan on a medium heat, add the onion and garlic and stir for a few minutes until the onions are soft.

  3. Add the spices and stir until fragrant.

  4. Add the tomatoes, chickpeas and coconut milk and stir occasionally for five minutes.

  5. Add the spinach, broccoli and quinoa, and season.

  6. Serve with brown rice and poppadoms.
