Simple Jackfruit Curry with Mushrooms

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1.5 cups mushrooms, chopped
  • 1 can jackfruit, drained and rinsed
  • 1/2 can coconut milk
  • 1/2 can tinned tomatoes
  • 1 tbsp vegan curry paste (or curry powder)
  • Salt and pepper, to taste

Preparation

  1. Add the onion, garlic, smoked paprika, cumin and garam masala to a non-stick saucepan with a splash of water

  2. Sauté for 2-3 minutes, until softened and fragrant

  3. Add the mushrooms and sauté for around 3 minutes more, until they begin to cook down

  4. Pull apart the jackfruit pieces using your hands or a fork

  5. Transfer the jackfruit to the saucepan and add the coconut milk, tomatoes, and curry paste

  6. Simmer over a medium heat for 8-10 minutes, until thick and creamy

  7. Season to taste with salt and black pepper before serving
