Easy Mexican Style Rice for Veggie Burrito

Ingredients

  • 1 cup quick cook brown rice (rinsed)
  • 1.5 cups water
  • 1 can tomatoes with green chilis
  • 1 tsp garlic and onion powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Preparation

  1. Bring everything to a boil in a small pot, cover with a lid and let simmer on very low heat for 15-20 minutes.

  2. Turn off the heat, let sit for another 5 minutes, fluff up with a fork. Enjoy!
