Easy Mexican Style Rice for Veggie Burrito
Ingredients
- 1 cup quick cook brown rice (rinsed)
- 1.5 cups water
- 1 can tomatoes with green chilis
- 1 tsp garlic and onion powder
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
Preparation
Bring everything to a boil in a small pot, cover with a lid and let simmer on very low heat for 15-20 minutes.
Turn off the heat, let sit for another 5 minutes, fluff up with a fork. Enjoy!
