Simple Homemade Refried Beans
Ingredients
- 1 pound dried pinto beans
- 4-6 cups water
- 1 medium yellow onion
- 3 cloves garlic
- 1 tablespoon olive oil
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 teaspoon salt
Optional
- 1 tablespoon red miso
Preparation
Cook the dried pinto beans by pressure cooking in an Instant Pot for 20 minutes on high and drain, or soak overnight and boil for an hour then drain.
Mince the garlic and onion and sauté with the olive oil until the onion is lightly browned.
Add the cooked beans, paprika, cumin, salt, optional red miso, and 4 cups of water to the pot.
Heat the mixture until it bubbles, then mix and mash with a heavy spoon.
Turn the heat down to low, stop stirring, and cook for 30 to 60 minutes.
Add more water as needed for the desired consistency.
Optionally, stir in 1 to 2 tablespoons of nutritional yeast for extra umami and cheesy flavor.
