Easy Homemade Refried Beans

Ingredients

  • 1 pound dried pinto beans
  • 4-6 cups water
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1 teaspoon salt

Optional additions

  • 1 tablespoon red miso

Preparation

  1. Cook the dried pinto beans until tender by either using an Instant Pot on high pressure for 20 minutes or soaking them overnight and boiling for about an hour.

  2. Mince the garlic and onion.

  3. Sauté the minced garlic and onion in olive oil until the onion is lightly browned.

  4. Add the cooked beans, paprika, cumin, salt, and 4 cups of water.

  5. Heat the mixture until it bubbles.

  6. Mix and mash the beans with a heavy spoon.

  7. Reduce the heat to low and stop stirring.

  8. Cook for 30 to 60 minutes, adding more water as needed to achieve the desired consistency.

  9. Optionally, stir in 1-2 tablespoons of nutritional yeast for extra flavor.
