Simple Homemade Refried Beans

Ingredients

  • 1 pound dried pinto beans
  • 4-6 cups water
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1 teaspoon salt

Optional

  • 1 tablespoon red miso

Preparation

  1. Cook the beans by pressure cooking for 20 minutes or soaking overnight and boiling for an hour, then drain.

  2. Mince the garlic and onion and sauté with the oil until the onion is lightly browned.

  3. Add the cooked beans, paprika, cumin, salt, and 4 cups of water.

  4. Heat until bubbling, then mix and mash with a heavy spoon.

  5. Turn the heat down to low, stop stirring, and cook for 30-60 minutes.

  6. Add more water as needed for the desired consistency.

Tips

  1. Stir in 1-2 tablespoons of nutritional yeast for extra umami and cheesy flavor if available.

  2. These beans can be enjoyed with chips, in a burrito, on rice, or with fresh vegetables.

  3. Prepare a large batch and freeze in containers for future meals.
