Roasted Red Pepper and Tomato Soup
Ingredients
- bell pepper
- tomatoes
- carrots
- garlic
- onion
- 1 cup broth
- chilli flakes
- tomato paste
- salt
- pepper
- fresh parsley
- Greek yogurt
Preparation
Roast the bell pepper, tomatoes, carrots, garlic, and onion in the oven and then blend them.
Add the blended mixture to a pot with 1 cup of broth, chilli flakes, tomato paste, salt, and pepper, and heat over low heat.
Serve with fresh parsley and a dollop of Greek yogurt.
