Roasted Red Pepper and Tomato Soup

Ingredients

  • bell pepper
  • tomatoes
  • carrots
  • garlic
  • onion
  • 1 cup broth
  • chilli flakes
  • tomato paste
  • salt
  • pepper
  • fresh parsley
  • Greek yogurt

Preparation

  1. Roast the bell pepper, tomatoes, carrots, garlic, and onion in the oven and then blend them.

  2. Add the blended mixture to a pot with 1 cup of broth, chilli flakes, tomato paste, salt, and pepper, and heat over low heat.

  3. Serve with fresh parsley and a dollop of Greek yogurt.
