Creamy Instant Pot Broccoli Soup
Ingredients
- 1 onion
- 1 jalapeño
- 2 carrots
- 2 heads of broccoli, cut into florets
- 1/3 cup red lentils
- 2 cups broth + 2 cups water
- 1/2 cup almond milk
- Salt, pepper, chili flakes
- Option to add a sprinkle of cheese (cheddar or Parmesan)
Preparation
Sauté onion, carrot, and jalapeño with salt in an Instant Pot.
Cancel sauté mode and add broccoli, lentils, and broth/water. Season with more salt and pepper.
Cook on high pressure for 5 minutes, then perform a quick release.
Stir in almond milk.
Use a hand blender to pulse until smooth.
Season with salt, pepper, and chili flakes to taste.
Optional: Sprinkle cheese (cheddar or Parmesan) on top.
Serve with toast for a hearty meal.
