Delicious Cheesy Vegetable Soup

Ingredients

  • Broccoli
  • Carrots
  • Zucchini
  • Japanese sweet potatoes
  • Cheddar cheese
  • Almond milk
  • Garlic powder
  • Onion powder
  • Salt and pepper
  • Grapeseed oil

Preparation

  1. Toss the veggies in grapeseed oil and roast them at 400°F for 20 minutes.

  2. Put about 1/2 cup of veggies in a blender with almond milk and spices and blend until creamy.

  3. Pour the soup into a pot, add some cheese, and stir until melted.
