Summer Veggie E G G Bites

Ingredients

  • chop & sauté in olive oil 1 bell pepper
  • 1 zucchini
  • 1 hot pepper {optional}
  • 9 eggs sprinkle with green onions & cheese
  • salt & pepper
  • 1/2 cup shredded cheddar
  • 1/4 cup almond milk
  • 1/2 tsp garlic powder

Preparation

  1. 1 hot pepper {optional}; after 4 mins add 2 cups chopped kale & cook for another 2 mins

  2. remove from heat;

  3. in a large bowl whisk together 9 eggs

  4. scoop veggie mixture into a well greased muffin tin & top with egg mixture {about 3/4 full
