Black Bean and Roasted Corn Soup
Ingredients
- 2 cans of Black Beans
- 4 Celery Stalks
- 1 medium Tomato
- 5 cloves of Garlic
- 1 Small Onion
- Fresh Cilantro
- 2/3 cup Roasted Corn (you can find frozen)
- 2 tsp of Cumin
- 2 tsp of @bragglivefoodproducts Aminos
- 1 tsp of Hickory Salt (sub liquid smoke)
- 2 Bay Leaves
- Handful of Fresh Cilantro
- 5 cups of water
- Salt & Pepper to taste
Preparation
Sauté the Onion, Garlic and Celery until Onion is translucent.
Add in Black Beans, Roasted Corn, chopped Tomato, chopped Cilantro and seasonings and let simmer for 10 minutes.
Add in Bay leaves and cover with water.
Lower heat to med low and let simmer for 25 - 30 minutes.
Serve with a scoop of Cilantro Rice, Fresh Cilantro, Avocado and @tofuttibrands Sour Cream.
