Creamy Smoky Corn Chowder
Ingredients
- 4 cups vegetable broth
- 1 cup non-dairy milk (coconut milk works great)
- 3 cups corn, fresh, frozen or canned
- 1 large potato, chopped
- 2 leeks, thinly sliced
- 2 cloves of garlic, minced
- A few sprigs of thyme
- 1 bay leaf
- 1 tbsp olive or avocado oil
- 1/2 smoked paprika or liquid smoke
- A pinch of salt and pepper
Preparation
In a large pot, heat oil over medium heat.
Add leeks and sauté for 2 minutes.
Add garlic and cook for an additional minute.
Add potato, corn, vegetable broth, smoked paprika or liquid smoke, bay leaf, thyme sprigs, salt and pepper and let simmer covered for 15 minutes.
Add milk and let cook for additional 5 minutes.
Take off heat, remove bay leaf and thyme sprigs.
Carefully blend soup with a hand blender or in batches in a blender.
Dish out and garnish with a pinch of cayenne pepper and parsley.
