Easy Vegan Butternut Squash Soup

Ingredients

  • 1 butternut squash
  • 2 cloves garlic
  • 1 shallot
  • olive oil (for spraying)
  • 1-2 cups veggie broth
  • salt
  • pepper
  • raw peppitas (optional)

Preparation

  1. Skin, de-seed, and cube 1 butternut squash; preheat oven to 350 degrees.

  2. Place 2 cloves of garlic, 1 shallot, and butternut squash cubes on a lined baking sheet and lightly spray with olive oil.

  3. Bake for 15-20 minutes or until golden brown.

  4. Place roasted items in a blender with 1-2 cups of veggie broth, salt, and pepper, and blend until smooth.

  5. Optionally top with raw peppitas.
