Sourdough French Toast with Banana and Spices

Ingredients

  • 1 banana
  • 1 tbsp tapioca flour
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp maple syrup
  • 1/2 cup cashew milk
  • Pinch of salt
  • Sourdough bread slices

Preparation

  1. Mash the banana and whisk all other ingredients in a medium sized bowl.

  2. Dredge the sourdough slices in the mixture.

  3. Coat a nonstick pan with vegan butter or coconut oil and fry the bread.

  4. Top with coconut kefir, granola, and figs or other desired toppings.
