Indian Style Coconut Cauliflower

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp yellow curry powder
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 (14oz) can diced tomatoes
  • 3 (14oz) cans coconut milk
  • 1 large head of cauliflower, cut into large florets

Optional

  • cilantro
  • naan
  • rice

Preparation

  1. Heat the olive oil in a large pot over medium heat

  2. Add the diced onion and sauté until softened, about 5 minutes

  3. Add garlic and ginger, cook for another minute until fragrant

  4. Stir in the curry powder, cinnamon, and cumin, cook for 30 seconds to toast the spices

  5. Add the diced tomatoes and coconut milk, bring to a simmer

  6. Add the cauliflower florets, cover, and cook until tender, about 15-20 minutes

  7. Serve with rice, garnished with cilantro, and naan on the side
