Irresistible Vegan Chocolate Chip Almond Cookies

Ingredients

  • 175g flour
  • 1/2 tsp bicarbonate of soda
  • 1 pinch of salt
  • 55g sugar
  • 55g brown sugar
  • 60g almond slivers
  • 100g chocolate chips
  • 125g plant-based butter
  • 1 tsp vanilla sugar

Preparation

  1. Preheat the oven to 200°C (392°F) with both upper and lower heat elements activated.

  2. In a mixing bowl, combine all the ingredients except the chocolate chips and almond slivers.

  3. Knead the mixture until it forms a smooth dough.

  4. Incorporate the almond slivers and chocolate chips into the dough, kneading until they are evenly distributed.

  5. Shape the dough into approximately nine balls, slightly flattening each one.

  6. Arrange the cookie dough balls on a baking tray lined with parchment paper.

  7. Bake in the preheated oven for 10-15 minutes, until the cookies are golden brown and slightly firm to the touch.

  8. Once baked, remove from the oven and let them cool on a wire rack before indulging.
