One-Pot Creamy Butter Chickpeas

Ingredients

  • 1 large onion, diced
  • 3 cloves garlic and 1 tablespoon fresh ginger, minced
  • 2 green chilis, minced (optional)
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon ground mustard
  • 2-3 large ripe tomatoes (400g), pureed or diced
  • 1/2 cup water
  • 1 1/2 cups chickpeas
  • 3/4 cup coconut cream

Preparation

  1. Heat some oil in a large pot and add the onion, garlic, ginger, and chilis. Saute for 5 minutes.

  2. Stir in all the spices.

  3. Once fragrant, add the tomatoes, water, and chickpeas.

  4. Cover the pot and let simmer on medium heat for 10-15 minutes, or until the sauce has thickened.

  5. Stir in coconut cream and simmer for 3-4 more minutes.

  6. If desired, season with more spices to taste, then serve warm.
