Delicious Chana Saag with Spinach and Chickpeas

Ingredients

  • 1 tbsp ghee/butter/veg oil
  • 1 medium onion finely chopped
  • 1 x 400g tin chickpeas
  • 150g baby leaf spinach - chopped
  • 1 heaped tsp finely chopped ginger
  • 1 heaped tsp finely chopped garlic
  • 1 green chilli finely chopped
  • 2 medium tomatoes - chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • Salt
  • Handful chopped fresh coriander

Preparation

  1. Using a skillet or frying pan on a medium high heat, sauté the onion, ginger, green chilli and a pinch of salt in the fat until the onion is starting to turn golden brown, then add the garlic and sauté for a few more mins.

  2. Stir in the dry spices for a couple of mins then stir in the tomatoes and cook down for a few mins before adding the chickpeas. Turn the heat down to medium and cook for five mins, stirring occasionally.

  3. Stir in the spinach until it’s all wilted down then season to taste and add the fresh chopped coriander.
