Red Wine Turkey Bolognese
Ingredients
- 2 tablespoons olive oil
- 1 pound ground turkey
- Kosher salt, to taste
- Freshly ground pepper, to taste
- 1 onion, finely chopped
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 3 garlic cloves, minced
- 1/4 teaspoon red pepper flakes, adjusted to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 cup red wine
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup whole milk
Garnishes
- 1/4 cup chopped fresh parsley, for garnish
- Freshly grated Parmesan cheese, for serving
Preparation
In a large pot, heat olive oil over medium heat. Add ground turkey, season with salt and pepper, and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Add onion, carrots, and celery to the pot. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
Stir in garlic, red pepper flakes, oregano, and basil. Cook for 1 minute, until fragrant.
Pour in red wine and simmer until reduced by half, about 5 minutes.
Add crushed tomatoes and bring to a simmer. Reduce heat to low, cover, and simmer for at least 1 hour, stirring occasionally.
Stir in whole milk and simmer for an additional 30 minutes, uncovered.
Season with salt and pepper to taste. Serve over cooked pasta, garnished with chopped parsley and grated Parmesan cheese.
