One Pot Lasagna Soup

Ingredients

  • 1 pound ground beef
  • 1 onion
  • 3 cloves garlic
  • 6-8 grape tomatoes
  • 1 1/2 cups tomato basil marinara sauce
  • 1 handful spinach
  • 3 cups beef or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried chives
  • Salt and pepper to taste
  • 2 cups uncooked lasagna sheets or as needed
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil leaves (optional, for garnish)
  • 3 tablespoons ricotta cheese
  • 2 tablespoons Parmesan cheese
  • 1/2 teaspoon black pepper

Preparation

  1. In a separate bowl, mix ricotta cheese, Parmesan cheese and black pepper. Set aside.

  2. In a large soup pot or skillet, add minced garlic and sauté for 30 seconds. Add onions and sauté until translucent.

  3. Add ground beef and cook until brown. Add the spices and mix well.

  4. Add grape tomatoes and marinara sauce, and mix well.

  5. Add spinach and broth, stir to combine. Bring to a boil, reduce heat to a simmer, and cook for 10-15 minutes to meld flavors.

  6. Stir in uncooked pasta and simmer for 10-12 minutes until tender.

  7. Add shredded mozzarella cheese and cover the pot for a minute to melt the cheese.

  8. Serve with the ricotta mixture and garnish with fresh basil leaves if desired.
