Creamy Broccoli Cheese Soup

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 small potato, chopped
  • 500 grams broccoli, chopped
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese

Preparation

  1. Heat the butter in a pot, add the onion and garlic, and stir until golden.

  2. Add the potatoes and broccoli, and stir for 2 minutes to infuse flavor.

  3. Sprinkle the flour, add the salt and pepper, add the broth, and stir gently until boiling.

  4. Reduce the heat and cook the soup for 15 minutes. Blend the soup until smooth using a blender or immersion blender.

  5. Return the soup to the pot, add the milk, cream, and cheese, heat until boiling, and serve.
