Creamy Cheesy Potato Soup

Ingredients

  • 2 tablespoons butter
  • 2 cloves minced garlic
  • 4 medium potatoes, cubed
  • 4 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon black pepper
  • 1/4 cup cream cheese
  • 1 tablespoon flour

For serving

  • chopped cilantro

Preparation

  1. In a deep pot with a thick bottom, place the butter and garlic and put the pot on medium heat. Stir the garlic with a wooden spoon until it becomes light golden. Add the potatoes and stir until they become golden.

  2. Add water, salt, cumin, coriander, and pepper. Let the potatoes cook for 30 minutes or until fully cooked.

  3. In a blender jar, place the potato mixture. Add cheese and flour. Blend on medium speed until smooth potato soup forms. Add more water if the soup is too thick.

  4. Return the potato soup to the pot. Using a hand whisk, stir the soup until it boils again. Continue stirring for several minutes.

  5. In a deep serving bowl or individual bowls, pour the potato soup. Sprinkle chopped cilantro on the soup and serve.
