Simple Vegan Tofu Bolognese Pasta Dish

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 2 tsp italian herbs
  • 1/2 tsp each: dried oregano, chili flakes, salt, pepper
  • 3 tbsp tomato paste
  • 500g crushed tomatoes or tomato sauce
  • 1/2 block (200g) extra firm tofu; I used @housefoodsamerica
  • 2-3 portions cooked pasta

Preparation

  1. Fry the onion and garlic in a large pot.

  2. After 5 mins, add in carrots, celery, seasoning, and tomato pasta.

  3. Sauté until well-incorporated, then pour in tomatoes and crumble in the tofu.

  4. Cover the pot and let simmer for 10-15 mins, until the sauce is thickened.

  5. Serve with cooked pasta & enjoy!
