Simple Vegan Tofu Bolognese Pasta Dish
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 large carrots, diced
- 2 stalks celery, diced
- 2 tsp italian herbs
- 1/2 tsp each: dried oregano, chili flakes, salt, pepper
- 3 tbsp tomato paste
- 500g crushed tomatoes or tomato sauce
- 1/2 block (200g) extra firm tofu; I used @housefoodsamerica
- 2-3 portions cooked pasta
Preparation
Fry the onion and garlic in a large pot.
After 5 mins, add in carrots, celery, seasoning, and tomato pasta.
Sauté until well-incorporated, then pour in tomatoes and crumble in the tofu.
Cover the pot and let simmer for 10-15 mins, until the sauce is thickened.
Serve with cooked pasta & enjoy!
