Simple Vegetable Butternut Curry

Ingredients

  • Olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 sweet potato
  • 200 g drained chickpeas
  • 200 g fresh spinach
  • 1 can peeled tomatoes
  • 400 g coconut cream
  • 2 tsp curry paste
  • Salt and pepper
  • Fresh cilantro

Preparation

  1. In a large sauté pan, brown the chopped onion and garlic in olive oil.

  2. Cut the sweet potato into small cubes and brown them in the sauté pan for 5 minutes.

  3. Add the can of peeled tomatoes, coconut cream, chickpeas, and curry paste.

  4. Mix for 5 minutes then cook for 15 minutes.

  5. Add the spinach, mix and cook for another 5 minutes.

  6. Sprinkle with fresh cilantro and enjoy.
