Simple Vegetable Butternut Curry
Ingredients
- Olive oil
- 1 onion
- 2 cloves garlic
- 1 sweet potato
- 200 g drained chickpeas
- 200 g fresh spinach
- 1 can peeled tomatoes
- 400 g coconut cream
- 2 tsp curry paste
- Salt and pepper
- Fresh cilantro
Preparation
In a large sauté pan, brown the chopped onion and garlic in olive oil.
Cut the sweet potato into small cubes and brown them in the sauté pan for 5 minutes.
Add the can of peeled tomatoes, coconut cream, chickpeas, and curry paste.
Mix for 5 minutes then cook for 15 minutes.
Add the spinach, mix and cook for another 5 minutes.
Sprinkle with fresh cilantro and enjoy.
