Spelt Kale Mint Wraps with Mushroom Filling

Ingredients

Wrap batter

  • 1/2 cup spelt flour
  • 3/4 cup water
  • 1 tbsp olive oil
  • 1 tsp dried garlic powder or flakes
  • 3/4 tsp Himalayan salt
  • 3/4 tsp fine black pepper
  • 1 cup kale (stems and all)
  • 5-6 stems mint leaves
  • 1 tsp lemon juice

Mushroom filling

  • 300g portobello mushrooms
  • one buffalo mozzarella ball (optional)
  • 1/2 tsp coarse black pepper
  • 1/2 tsp rock Himalayan salt
  • 1 tbsp olive oil
  • 1 crushed garlic clove
  • 1/4 tsp chilli flakes
  • 1 tsp herbs of your choice (e.g., oregano)

Toppings

  • Homemade spinach pesto (prepared separately)
  • Super lentil sprouts

Preparation

  1. Blend all wrap batter ingredients in a nutribullet or blender until smooth.

  2. Heat a small frying pan over medium heat, add oil, and pour the batter to coat the pan evenly. Cook for 2 minutes on each side, flipping twice.

  3. For the mushroom filling, heat olive oil in a pan, add crushed garlic and sauté briefly, then add mushrooms and seasonings, cooking until tender

  4. Assemble the wraps by filling them with the mushroom mixture, adding mozzarella if desired, topping with homemade spinach pesto, and sprinkling with lentil sprouts
