Spicy Cashew Dressing Sweet Greens Copycat

Ingredients

  • 3/4 cup cashews
  • 3 tbsp lime juice
  • 1.5 tbsp rice vinegar
  • 1/3 cup packed chopped cilantro
  • 1/2 - 1 tsp cayenne pepper
  • 1/2 inch fresh ginger
  • Himalayan salt to taste
  • 3-4 tbsp warm water (optional)

Preparation

  1. Soak cashews for at least 4 hours and drain.

  2. Blend all ingredients together until smooth.

  3. Taste and adjust seasonings to your liking.

  4. If desired, add 3-4 tbsp of warm water to thin the dressing.
