Vegan Black Bean and Beetroot Burgers

Ingredients

  • 400g cooked black beans (1 tin)
  • 1 small red onion
  • 2 cooked or raw beets
  • 1/2 cup porridge oats
  • 1 tbsp chia seeds or 1 tbsp flaxseed (pre-soaked in 3 tbsp water)
  • 2 garlic cloves
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp black pepper
  • 3 tbsp coriander
  • 1 tbsp coconut oil or any preferred oil
  • 1-2 green chilies (optional)

Preparation

  1. If using flaxseed instead of chia seeds, soak 1 tbsp flaxseed in 3 tbsp water for 5-10 minutes to create a flax egg.

  2. Place all ingredients except coriander and coconut oil into a food processor and blend until well combined.

  3. If the mixture is not firm enough, add more oats until it can be molded into burgers.

  4. Stir in the coriander.

  5. Form the mixture into burger patties.

  6. Heat the coconut oil in a frying pan over medium heat.

  7. Fry the burger patties for a few minutes on each side until golden brown and cooked through.

  8. Serve in a bun or with salad, optionally with avocado salsa.
