Vegan Butternut Squash #Soup

Ingredients

  • de-seed and cube 1 butternut squash + preheat your oven to 350 degrees. Place 2 cloves of garlic + 1 shallot + butternut squash cubes on a lined baking sheet and lightly spray with olive oil. Bake for 15-20 minutes or until golden brown. Place roasted items in a blender with 1-2 cups of veggie broth + salt + pepper: blend until smooth!
