Easy Vegan Butternut Squash Soup
Ingredients
- 1 butternut squash
- 2 cloves garlic
- 1 shallot
- olive oil (for spraying)
- 1-2 cups veggie broth
- salt
- pepper
- raw peppitas (optional)
Preparation
Skin, de-seed, and cube 1 butternut squash; preheat oven to 350 degrees.
Place 2 cloves of garlic, 1 shallot, and butternut squash cubes on a lined baking sheet and lightly spray with olive oil.
Bake for 15-20 minutes or until golden brown.
Place roasted items in a blender with 1-2 cups of veggie broth, salt, and pepper, and blend until smooth.
Optionally top with raw peppitas.
