Vegan Sweet Chili Twist Bread

Ingredients

For the bread

  • 1 cup lukewarm water
  • 3/4 tbsp active dry yeast
  • 1 tbsp olive oil
  • 2 & 1/4 cups all-purpose flour or bread flour
  • 1 tsp salt
  • Pinch of sugar

For the sweet chili

  • 1/3 cup rice vinegar
  • 2 tsp dried red chili flakes
  • 1/3 cup water
  • 1/3 cup + 2 tablespoons cane sugar
  • 1 tbsp rice wine or white vinegar
  • 1.5 tsp finely minced garlic
  • 1 tsp finely minced ginger
  • 1 tsp soy sauce
  • 2 tsp cornstarch dissolved in 1 tbsp water

For brushing

  • 1/2 cup @eatjust or aquafaba

Preparation

  1. In a bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes, then stir to combine.

  2. In another bowl, add olive oil, flour, and salt. Pour in the yeast mixture and mix with a fork until fully incorporated.

  3. On a lightly floured surface, remove the dough from the bowl and knead for approximately 10 minutes, until the dough is smooth and elastic (add extra flour if the dough is too sticky).

  4. Place the dough in a lightly oiled bowl. Cover with plastic wrap and a clean kitchen towel. Let it rise for 1-2 hours or until doubled in size.

  5. For the sweet chili sauce, combine all the ingredients except for the cornstarch mixture in a small saucepan. Bring it to a boil, stirring regularly. Once the sugar is dissolved, stir in the cornstarch mixture and cook until thickened, about 1 minute. Set aside.

  6. Preheat the oven to 350F. Punch down the dough when it's ready and place it on a lightly floured board. Divide the dough into 2 equal pieces.

  7. Roll each piece into a flat strip about 10 inches long. Spread the sweet chili sauce onto each strip, then roll them into cylinders, enclosing the chili inside.

  8. Twist each strip around each other and press the ends to seal. Place the twisted dough onto a baking tray lined with parchment paper.

  9. Brush the dough with @eatjust or aquafaba. Loosely cover with foil and bake for 30 minutes. After 30 minutes, remove the foil, brush again with @eatjust or aquafaba, and bake for another 30 minutes or until golden brown.

  10. Serve the Vegan Sweet Chili Twist Bread warm and enjoy!
