Creamy Basil Sauce

Ingredients

  • baby arugula
  • sliced purple cabbage
  • for the sauce
  • 3/4 cup of soaked cashew
  • 2 big handfuls of fresh basil
  • 2 tsp of fresh squeezed lemon juice
  • 1/2 tsp of apple cider vinegar
  • 1/2 tsp of pink himalayan salt
  • 1/4 tsp of black pepper
  • for the fritters
  • 3 grated carrots
  • 1 grated broccoli stem
  • 1/2 cup of minced onion
  • 1 clove of minced garlic
  • 1 3/4 tsp of garlic powder
  • 3/4 tsp of pink himalayan salt
  • 1/2 tsp of black pepper
  • 1/2 tsp of cumin
  • 1 flax egg
  • 3/4 of almond meal

Preparation

  1. Combine all ingredients for sauce into a blender or food processor

  2. Blend until smooth and set aside in fridge

  3. In a large bowl combine carrots, broccoli, onion, garlic, and seasonings

  4. Stir well with hands

  5. Preheat oven to 375°

  6. Add remaining ingredients and stir well

  7. Grab a baking sheet and gently form mixture to desired sized fritters

  8. Place fritters in oven for 15 minutes each side

  9. Once time is up remove from oven and allow to cool for 5 minutes

  10. Top with baby arugula and sliced purple cabbage

  11. Finish with creamy basil sauce and enjoy ???? #threebunnies
