FODMAP Friendly Chocolate Chickpea Cookies
Ingredients
- 150 grams chickpeas (drained & very well rinsed)
- 2 tbsp natured peanut butter
- 1 scoop almond meal
- 1 tsp stevia (you can also use maple syrup or rice malt syrup if you like)
- 1 tsp baking powder
- 2 tsp vanilla essence
- 40 grams dark vegan chocolate (I used @lovingearth )
Preparation
Preheat the oven to 160 degrees Celsius
In a food processor mix all the ingredients except for dark chocolate, so it forms a smooth mixture
Chop the chocolate and stir it in cookie dough mixture
Slightly moisten your hands and form cookies. Place them on parchment paper
Bake them for around 10 minutes, until they get a little golden brown
Enjoy the hell out of them
