Gooey Oatmeal Chocolate Chip Peanut Butter Cookies

Ingredients

  • 2 cups gluten-free oats, cooked ahead of time with water
  • 1/2 cup dairy-free chocolate chips or more
  • 1 tablespoon coconut oil
  • Dash of cinnamon
  • Dash of nutmeg
  • 1 tablespoon cocoa powder
  • Dash of vanilla extract
  • Dash of Himalayan sea salt
  • Peanut butter

Preparation

  1. Combine the oats, coconut oil, cinnamon, nutmeg, cocoa powder, and vanilla extract, then bake on a cookie sheet for 10-15 minutes at 325°F.

  2. Once the oats are cooled, form them into flat circles, add a thin layer of peanut butter, top with chocolate chips, and sprinkle with salt.

  3. Bake the cookies for 10-15 minutes at 325°F or until golden brown
