Gooey Oatmeal Chocolate Chip Peanut Butter Cookies
Ingredients
- 2 cups gluten-free oats, cooked ahead of time with water
- 1/2 cup dairy-free chocolate chips or more
- 1 tablespoon coconut oil
- Dash of cinnamon
- Dash of nutmeg
- 1 tablespoon cocoa powder
- Dash of vanilla extract
- Dash of Himalayan sea salt
- Peanut butter
Preparation
Combine the oats, coconut oil, cinnamon, nutmeg, cocoa powder, and vanilla extract, then bake on a cookie sheet for 10-15 minutes at 325°F.
Once the oats are cooled, form them into flat circles, add a thin layer of peanut butter, top with chocolate chips, and sprinkle with salt.
Bake the cookies for 10-15 minutes at 325°F or until golden brown
