Oatmeal Chocolate Chunk Hemp Seed Cookies

Ingredients

  • 1 large egg, room temperature or 1 flax egg
  • 1/2 cup unsalted butter, very soft or vegan butter
  • 1/2 to 3/4 cup coconut sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups rolled oats (not instant or quick oats)
  • 1/3 cup hemp seeds
  • 3/4 cup whole wheat pastry flour (gluten-free works well)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt, plus more for sprinkling on top
  • 1 cup chopped dark chocolate

Preparation

  1. Preheat oven to 350F and line a large baking sheet.

  2. In a large bowl, add the egg, butter, coconut sugar, vanilla, and mix with a whisk vigorously until smooth and slightly fluffy.

  3. Add the oats, flour, baking soda, salt, and stir with a spatula to combine.

  4. Fold chopped chocolate into the batter.

  5. Using a medium-sized cookie scoop (1.5 tablespoons), scoop mounds of batter onto the baking sheet, 2 inches apart.

  6. Bake for 10 to 13 minutes; remove at 11 minutes for softer cookies or bake longer for well-done cookies, but do not overbake.

  7. Cookies firm up as they cool.
