Raw Protein Cookies
Ingredients
- 1 cup hazelnuts
- 1/8 cup pumpkin seeds
- 1/8 cup ground almonds
- 1/3 cup nut butter (I used peanut and almond)
- 1/4 cup raisins
- 6 Medjool dates
- 1 tbsp date nectar
- 1 tsp vanilla essence
Preparation
First process the hazelnuts and pumpkin seeds in a food processor until finely ground
Then add the rest of the ingredients and process until the mixture holds together when pinched
Scoop a heaped tablespoon of mixture and shape into a ball, then flatten with a fork
I store them in the freezer but it really depends how quick you eat them! Makes about 12
