Raw Protein Cookies


  • 1 cup hazelnuts
  • 1/8 cup pumpkin seeds
  • 1/8 cup ground almonds
  • 1/3 cup nut butter (I used peanut and almond)
  • 1/4 cup raisins
  • 6 Medjool dates
  • 1 tbsp date nectar
  • 1 tsp vanilla essence


  1. First process the hazelnuts and pumpkin seeds in a food processor until finely ground

  2. Then add the rest of the ingredients and process until the mixture holds together when pinched

  3. Scoop a heaped tablespoon of mixture and shape into a ball, then flatten with a fork

  4. I store them in the freezer but it really depends how quick you eat them! Makes about 12
