Vegan Banana Cookies with Chocolate Chips and Coconut

Ingredients

  • 2 small ripe bananas (3/4 cup mashed)
  • 1 cup almond flour
  • 1/2 cup + 2 tbsp. all-purpose flour (gluten-free baking flour can be used)
  • 1/4 tsp. baking powder
  • Extras: chocolate chips, PS Snacks cookie dough, coconut

Preparation

  1. Preheat the oven to 350°F (175°C) and spray or line a baking sheet.

  2. In a large bowl, mash the bananas, then stir in the almond flour, all-purpose flour, and baking powder until well combined.

  3. Roll the dough into 15 cookies or use a cookie scoop to portion them. Slightly flatten each cookie and top with chocolate chips.

  4. Bake for 8 minutes, then let the cookies cool before proceeding to the next step.

  5. Once cooled, fill each cookie with a small amount of PS Snacks cookie dough and coat the outsides with shredded coconut.
