Creamiest Cinnamon Date Cauliflower Oats

Ingredients

  • 1/2 cup soaked gluten-free oats
  • Frozen cauliflower rice (amount as desired)
  • 2 dates
  • 1/2 cup pea milk
  • Pinch of salt
  • 1 teaspoon chia seeds
  • Cinnamon (amount as desired)

Toppings

  • Persimmon (sliced or chopped)
  • Frozen blueberries
  • Bee pollen
  • Honey sesame butter

Preparation

  1. Combine the soaked oats, cauliflower rice, dates, pea milk, salt, chia seeds, and cinnamon in a saucepan over medium heat and cook until creamy and well mixed

  2. Once cooked, remove from heat and let cool slightly

  3. Top with persimmon, frozen blueberries, bee pollen, and honey sesame butter before serving
