Crispy Sweet Potato Waffle with Toppings

Ingredients

  • 1/3 cup mashed sweet potato
  • 2 eggs
  • 1/2 cup nut milk
  • 2 tablespoons coconut oil
  • 1/2 cup almond flour
  • 1/4 cup tapioca flour (optional)
  • 1 teaspoon baking soda

Toppings

  • Caramelized banana
  • Yogurt of choice
  • Peanut butter
  • Mashed raspberry
  • Granola
  • Chia seeds

Preparation

  1. Steam or bake the sweet potato until soft, peel it, and mash to measure 1/3 cup.

  2. In a bowl, mix together the mashed sweet potato, eggs, nut milk, coconut oil, almond flour, tapioca flour (if using), and baking soda to form a batter.

  3. Preheat a waffle iron and cook the batter until golden and crispy on the outside.

  4. Assemble the waffle with toppings: add caramelized banana, yogurt, peanut butter, mashed raspberry, granola, and chia seeds.

Toppings

  1. Caramelize the banana by cooking it in a pan with a little sugar or butter until golden.

  2. Mash the raspberries if they are not already mashed.
