Crispy Sweet Potato Waffle with Toppings
Ingredients
- 1/3 cup mashed sweet potato
- 2 eggs
- 1/2 cup nut milk
- 2 tablespoons coconut oil
- 1/2 cup almond flour
- 1/4 cup tapioca flour (optional)
- 1 teaspoon baking soda
Toppings
- Caramelized banana
- Yogurt of choice
- Peanut butter
- Mashed raspberry
- Granola
- Chia seeds
Preparation
Steam or bake the sweet potato until soft, peel it, and mash to measure 1/3 cup.
In a bowl, mix together the mashed sweet potato, eggs, nut milk, coconut oil, almond flour, tapioca flour (if using), and baking soda to form a batter.
Preheat a waffle iron and cook the batter until golden and crispy on the outside.
Assemble the waffle with toppings: add caramelized banana, yogurt, peanut butter, mashed raspberry, granola, and chia seeds.
Toppings
Caramelize the banana by cooking it in a pan with a little sugar or butter until golden.
Mash the raspberries if they are not already mashed.
