Homemade Vegan Low FODMAP Mayonnaise

Ingredients

  • 3/4 cup unsweetened soy milk
  • 0.5 tsp himalayan sea salt
  • 4 tsp apple cider vinegar
  • 4 tsp rice malt syrup or maple syrup
  • 1.5 cups extra virgin olive oil
  • 1 tsp mustard powder

Preparation

  1. Blend all ingredients together in a high-speed blender until a thick, mayonnaise consistency is reached.

  2. If you cannot tolerate apple cider vinegar, substitute with white vinegar.

  3. Optionally, add nutritional yeast for a cheesier flavor if tolerated.
